How to Make Cameroonian Egusi Stew

On Sustainable Gastronomy Day 2021, Media Packages Cameroon(MPC) took a look at how to prepare Cameroonian Egusi Stew, a delicious sauce which is equally popular in most West African Countries including Nigeria and Ghana, with slight variations in the preparation.

Egusi stew or soup is made from the seeds of notably Pumpkin in the case of Cameroon, and is cooked with the addition of any of a variety of leafy vegetables as well as meat. In this case, cabbage is used alongside other mixed vegetables and pork meat.

Sustainable Gastronomy Day was instituted by the United Nations on Dec. 21, 2016, designating June 18 for an international observance to recognise gastronomy as a form of cultural expression. In Cameroon, Egusi stew/soup is a delicacy in many households and restaurants.
